Everyone needs a simple, healthy, yummy, pancake recipe and I have just the one for you.
1 cup whole white wheat flour
1 tablespoon REAL maple syrup *evaporated cane juice or brown sugar will work if you don’t have maple syrup but don’t even think about using the fake stuff
2 1/2 teaspoons aluminum free baking powder
1/4 teaspoon salt
1 cup milk
2 tablespoons coconut oil
Put the flour and salt in a mixing bowl and add the milk, syrup and oil. Mix only until flour is wet and then cover with a towel. Leave this to sit on the counter overnight (if making for breakfast) or all day (if making for dinner).
*Yes, you read that right. I just told you to leave your pancake batter sitting on the counter for hours. Trust me, its fine. In fact, its more than fine. Letting flour soak for a while will help your body to digest it and it will make sure that you get all the nutrients you can out of it.
Right before you are going to cook your pancakes add the baking powder and the egg. Mix really really well.
Cook over medium heat, I usually use an electric griddle set at 350 but a pan on the stove works too.
This recipe makes 12 medium sized pancakes.
We top ours with butter and some more syrup but you can go crazy with yours. Serve them up for breakfast or BFD (breakfast for dinner) because lets face it, pancakes are good all day long.
