Let’s face it. Dinner has to be made even when we are busy, people have to eat and it’s our job (well at least it’s my job) to make that happen.  Real, good for you, food doesn’t have to be fancy, difficult, or expensive.  Keep your pantry stocked with the basics, be willing to be creative, and you really can get dinner on the table no matter how busy and crazy life gets.

5 dinners to make when you don’t have time to make dinner

Crock Pot:  The crockpot is such a life saver! I typically prep the night before (you can just stick the whole pot in the fridge till morning) so that I don’t have to rush in the morning.  One of my favorite crock pot recipes is clam chowder.  You can also check out Humorous Homemaking, she has a huge list of recipes.

Breakfast for Dinner:  How long does it take to make scrambled eggs? Toast? Open a jar of apple sauce? from staring at the kitchen to sitting at the table in 10 minutes, breakfast for dinner is one of our favorites.

Baked Potato Buffet: Start by baking a bunch of potatoes, then put together whatever toppings you can find.  I keep a bag of frozen broccoli in the freezer for this very reason and often plan to have this meal after Breakfast for dinner so we can use up any left over bacon or sausage in them too.

Sandwiches:  Repeat after me “Dinner doesn’t have to be fancy”.  Sandwiches are quick, inexpensive, and they make everyone happy.  We like popcorn or kale chips as sides and they are easily made while you assemble sandwiches.

This and That:  Some people call this meal “muffin tin meal” or “snack dinner” but really its all the same.  Put out a lot of little things and let everyone munch.  Cut fruit, veggies with dip, cheese and crackers, are all great options!
